Shoes in Rock Canyon


Erik and I have been wanting to go snowshoeing for the longest time. We have always had something come up... until last Monday. We rented some snowshoes and went up into Rock Canyon. The view was beautiful and the entire day made me wish that I could be camping. A lot of it reminded me of when my dad would take me on backpacking trips when I lived back at home. I love the outdoors. We had so much fun in the mountains! We will miss them when we leave. Here are some of the best shots:




One of the best things about snowshoes is that you can walk on snow and it's as if you are practically weightless.

We went to the doctor on Friday and our little baby got it's first photo shoot. Yes, it sat through many pictures and was very well behaved. We even got to take home four of the pictures. Here is our cute little bundle of love!

Valentine's Day 2011

This Valentine's Day we went a little crazy... we love holidays. I'd have to say that Erik is the one behind all of the festivities and I just join in the fun. We started off the day with breakfast in bed. He made me delicious food that was all colored red and pink, of course. I had chocolate covered strawberries, egg in the hole (shaped like a heart), oranges, cream of wheat, and Valentine's Day doughnuts. If that wasn't enough, he also got me the prettiest flowers. I'd post pictures but our camera was out of batteries... so sad.

Then we went to class and most of the day went by sitting in lectures. When we came home I got to give Erik his gift! It was an ice mold of teeth. We saw it in the Museum of Art and he really liked it so I decided it would be a good V-day present.

After the gifts we made our traditional Valentine's Day pizza. It was a little better shape than the one last year. We finished the day watching a movie. RED was the one that we decided on. It is the funniest movie! I really like the love story, and as Erik will tell you, I base whether a movie is good or not on the love story. (Yeah, Transformers STINKS!) Anyway, we had a lovely day and I felt very appreciated.

Oh, What a Beautiful Day!

Today the sun was shining and the sky was blue. There were wispy clouds above the snow covered mountains. After church Erik and I decided to get our sun for the winter. We packed up a blanket and a small snack and ventured outside. We sat in our front yard for about two hours enjoying the sun and reading and I even got a chance to write in my journal. It was such a beautiful day! I'm so excited for spring weather. It is amazing what a little bit of sun can do for me.

Once Upon a Lazy Morning



Today I woke up and found that all of the quizzes that i need to take for the week are not yet available... thank you dear TAs. So I decided to make good use of my morning by creating a delicious breakfast. I made crepes.


They were really good and so I decided I'd share them with you... in picture only. I love to put sour cream on them with jam. It sounds crazy but it's really good! The jam of the morning was homemade blond raspberry. It was a great breakfast treat!

Crepes:
4 eggs
5\8 cup milk
1 T sugar
1\2 tsp. salt
1\2 cup flour
2 T melted butter
1\2 tsp. vanilla

Blend this all up until the flour is integrated. Cook on medium low heat until brown on both sides. It was so tasty! You'll love it!
